
Homemade Mayonnaise
Ingredients
1 egg (room temperature)
1 tsp Dijon mustard
1 cup avocado oil
Juice of ½ lemon
Pinch of salt
Instructions
Add the egg, mustard, avocado oil, lemon juice, and salt into a tall, narrow container (like a wide-mouth jar or blender cup).
Place your immersion blender at the bottom of the container.
Turn it on and blend without moving for 10 seconds.
Slowly lift the blender while it’s running to incorporate all the oil.
Blend until smooth and thick — usually 20–30 seconds total.
Taste and adjust lemon or salt if needed.
Tips
Use room temperature ingredients for best results.
Store in a sealed container in the fridge for up to 1 week.
Use as a base for aioli, dressings, or dips.
